Blueberry Basil Crumb Bars w. Sage Shortbread Crust (dairy free + gluten free)

Replace the morning blueberry muffin with these refreshing yet fulfilling treats! Note there are 3 parts to this recipe!

Blueberries are rich in anthocyanins that are essential for building a strong immune system.

Basil is rich in an essential oil called eugenol that helps improve the digestive system.


Lemon juice is rich in Vitamin C that helps prevent cell damage.


almond flour contains vitamins, minerals, and antioxidants that can provide important benefits such as heart health, digestive health, and diabetes control. It is also an excellent source of iron and calcium.


coconut oil contains a unique combination of fatty acids that have been shown to help support healthy brain function.


maple is rich in antioxidants and full of minerals that are good for bone health, lower cholesterol and promote better brain health.


raw local honey contains a blend of local pollen, which can strengthen your immune system and reduce allergy symptoms.


natural sea salt is full of necessary nutrients and trace minerals that play an essential role in many of our body's vital functions, including nerve function and mental health.


sage is very high in vitamin K and has many antioxidants that have linked to benefits such as lower cancer risk, memory improvement, and improved brain function.




Sage Shortbread Crust


SAGE SHORTBREAD CRUST

INGREDIENTS


2 cups almond flour

2 tbsp coconut oil

1 tbsp maple syrup + 1 tbsp honey

1/4 tsp SalterieOne sea salt

1 tsp fresh chopped sage



METHOD


Combine in food processor. Pulse until combined.


Press mix into lines baking pan and bake at 350 for 13 minutes.


Cool for 20 minutes.


*Spread with Blueberry Basil Fruit Spread.

Blueberry Basil Fruit Spread



BLUEBERRY BASIL FRUIT SPREAD

INGREDIENTS


2 cups blueberries

1" basil leaves

3 tbsp lemon juice

1/8 tsp sea salt

2 tbsp dark honey


METHOD


First, blend all the ingredients together.


Next, add the blended ingredients to a pot, bring to boil, and continue cooking over high heat for 10 minutes, whisking continuously.


Let cool and spread over shortbread crust before adding Crumb Topping.

Crumb Topping:


INGREDIENTS


1 cup almonds

1/2 cup dried coconut (unsweet)

1 tsp maca

1 tbsp honey

1/4 tsp sea salt

1 tbsp coconut oil


METHOD


Combine in processor and pulse to combine.


Finally, sprinkle crumb mix over Blueberry Basil Fruit Spread.
