This simple, satisfying and immune system supporting summer salad is one of our favorite things to whip up during the early days of our local corn harvest!
CORN is a great source of many essential nutrients, including potassium, iron, zinc, magnesium, phosphorus, and selenium, which have been shown to play a role in supporting the nervous system and balanced mental health.
TOMATOES are rich in vitamin C which plays an essential role in immune system support.
BASIL is a great source of antioxidants that help to protect cells from damage caused by oxidative stress.
INGREDIENTS
8 cups cooked corn, off the cob (we love to grill our corn!)
3 cups ripe tomato, diced
4 cups ripe avocado, diced
4 tbsp fresh lime juice
4 tbsp fresh lemon juice
1/2 cup fresh basil, chopped
1/4 cup olive oil
1 tsp duxbury saltworks sea salt
METHOD
This may be the easiest recipe of all time....simply combine all of the ingredients into a large mixing bowl and toss gently to combine!
Enjoy immediately, or keep in the fridge for a few days for a more intense flavor!
