Immune Support Summer Corn Salad Recipe


This simple, satisfying and immune system supporting summer salad is one of our favorite things to whip up during the early days of our local corn harvest!



CORN is a great source of many essential nutrients, including potassium, iron, zinc, magnesium, phosphorus, and selenium, which have been shown to play a role in supporting the nervous system and balanced mental health.


TOMATOES are rich in vitamin C which plays an essential role in immune system support.


BASIL is a great source of antioxidants that help to protect cells from damage caused by oxidative stress.





INGREDIENTS 8 cups cooked corn, off the cob (we love to grill our corn!) 3 cups ripe tomato, diced 4 cups ripe avocado, diced 4 tbsp fresh lime juice 4 tbsp fresh lemon juice 1/2 cup fresh basil, chopped 1/4 cup olive oil 1 tsp duxbury saltworks sea salt

METHOD This may be the easiest recipe of all time....simply combine all of the ingredients into a large mixing bowl and toss gently to combine! Enjoy immediately, or keep in the fridge for a few days for a more intense flavor!
