Honey Garden Crunch Salad Recipe

This ridiculously easy crunch salad recipe features blueberries, butter beans, local honey from Jenny D's Bees and Duxbury Saltworks' rose, savory and chive infused Spring Sea Salt and is the perfect recipe to add a little lightness and brightness to an otherwise ordinary day!

LOCAL HONEY contains a blend of local pollens, which can strengthen a person's immune system, and reduce pollen allergy symptoms.

BLUEBERRIES are rich in antioxidants that help to prevent oxidative damage to cells.

BUTTER BEANS are rich in plant proteins that play an essential role in muscle repair.

CARROTS contain beta carotene which helps to increase the bioavailability of vitamin a found in foods.

CUCUMBERS contain about 96% water making them a great source of food based hydration.

CITRUS contains vitamin C which helps to boost the immune system.

This salad makes a beautiful breakfast and pairs perfectly with lean protein for a crunchy lunch or light dinner!




2 cups butter beans

2 cups sliced cucumber

1 cup whole blueberries

1 cup shredded carrot

4 tbsp lemon juice


In a large mixing bowl, combine 4 tbsp lemon juice, 1 cup blueberries and 2 cups butter beans, then mix gently to combine. Next add 1 cup shredded carrot, 2 cups sliced cucumber and 1 tbsp Jenny D's Bees Raw Local Honey, mix gently to combine, then season to taste with Duxbury Saltworks Spring Salt.

PRO TIP: Let it rest!

This dish is perfect for enjoying right away or saving for later! The longer you let it rest, the more the flavors will marry and absorb into the ingredients.
