Craveable Harvest Crunch Salad Recipe w. Clean Maple Cider Dressing

This easy seasonal salad recipe is equal parts clean, crunchy and craveable, and is perfect for both week night dinners AND holiday entertaining!


apples are an excellent source of antioxidants which help to prevent damage to cells caused by states of oxidative stress

beets contain natural nitrates which help to deliver oxygen to the muscles by increasing nitric acid levels in the blood stream


brussels sprouts are an excellent source of vitamin k which plays an essential role in the production of proteins needed to maintain proper bone, blood and muscle health


carrots are a great source of beta carotene, a powerful antioxidant that helps to prevent cognitive decline


walnuts are a good source of plant based omega-3 fatty acids which have been shown to help prevent heart disease


maple syrup contains polyphenols, a type of antioxidant that has specifically been shown to help reduce inflammation


apple cider vinegar is a natural preservative that has been shown to kill both bacteria and pathogens


natural sea salt is an excellent source of phytonutrients, necessary nutrients that are needed in trace amounts to support many of the body's vital functions





Clean Maple Cider Dressing


INGREDIENTS


1/2 cup rugged ridge forest wood fired maple syrup

1/2 cup liquefied coconut oil

1/4 cup apple cider vinegar

1 tbsp dijon mustard

1 tbsp duxbury saltworks classic sea salt



METHOD


Combine all ingredients in a mixing bowl and whisk until combined.




Healthy Harvest Crunch Salad


INGREDIENTS


3 cups brussels sprouts, shredded

1 cup carrot, peeled and shredded

1 cup beets, peeled and shredded

1 cup gala apple, slivered

1 cup raw walnuts



METHOD


Combine all the ingredients in a large bowl, add dressing to taste and toss to combine.


Enjoy immediately as a craveable crunch salad, or later as a flavorful slaw!
