Easy Oven Roasted Chicken & Sweet Potato Sheet Pan Hash

Get a nutritious and delicious scratch-made dinner on the table in under half an hour with this super simple sheet pan supper that's packed with health benefits and perfect for cozy autumn evenings at home!

chicken breast is an excellent source of protein, a necessary nutrient that plays a vital role in the healthy production of bones, blood, cartilage, skin and muscles


sweet potatoes are a good source of magnesium, a nutrient that supports a variety of vital functions including nerve, muscle and mental health


sweet onions contain chromium which has been shown to help regulate blood sugar levels


natural sea salt has been shown to help the body produce serotonin, a naturally occurring chemical compound that has been shown help cure and prevent symptoms of depression

INGREDIENTS


1 pound boneless skinless chicken breast (cut into 1" chunks)

1 cup purple sweet potatoes (cut into 1/4" slices)

1 cup white sweet potatoes (cut into 1/4" slices)

1 cup orange sweet potatoes (cut into 1/4" slices)

2 cup onion (cut into 1/2" chunks)

3 tbsp coconut oil



METHOD


Preheat the oven to 425 degrees.


Combine all of the sweet potatoes, onion, classic sea salt and 2 tbsp coconut oil in a bowl and toss to combine. Then, spread the coated sweet potatoes in a single layer on a sheet pan and set aside.


Combine the chicken, autumn salt blend, and 1 tbsp coconut oil in a bowl and toss until chicken is evenly coated with salt blend. Then, place chicken chunks throughout the sweet potatoes on the sheet pan, place in the oven and roast for 25 minutes.


Let cool, season to taste with classic sea salt and serve immediately.


PRO TIP: This dish reheats very well! Make a double batch to save yourself some time in the kitchen in the days ahead!
