CRISPY CITRUS SPRING GREENS
4 cups | baby spring greens
1/4 cup | chopped dill
1 cup | shaved fennel
1/2 cup | sliced radish
1/4 cup | pistachio nut meats
1/3 cup | apple cider vinegar
1/3 cup | extra virgin olive oil
2 tbsp | dijon mustard
6 drops | orange essential oil
1/4 tsp | garlic powder
1/4 tsp | sea salt, plus more for seasoning
to taste | cracked black pepper
to taste | fresh squeezed lemon juice
To create dressing, combine the olive oil, orange oil, mustard, vinegar, sea salt and garlic powder in a mixing bowl, whisk until combined and set aside.
In a separate bowl, gently combine the greens, dill, radishes and pistachios with desired amount of dressing.
Finish with a squeeze of fresh lemon, black pepper and a pinch of sea salt, and enjoy immediately!
