Clean Cashew Chicken Recipe

CASHEWS are rich in vitamin k, an essential nutrient shown to help support bone health.

COCONUT AMINOS contains amino acids, organic compounds that have been shown to play an essential role in everything from energy production, to digestion.





INGREDIENTS


1 pound chicken tenders, cut into 1" chunks

1 large sweet onion, 1" dice

3/4 cup raw cashews

1 tbsp crushed garlic

2 tbsp coconut oil

1 tbsp coconut aminos



METHOD


Heat the coconut oil in a pan over high heat until nearly smoking, add the diced chicken to the pan and toss quickly to coat in oil.


Season chicken with a pinch of duxbury saltworks sea salt and let cook for 2-3 minutes before stirring and continuing to cook for 2-3 minutes.


Add the diced onion and another pinch of duxbury saltworks sea salt to the pan and stir fry for another 2-3 minutes over high heat. Add additional coconut oil if needed.


Then, add the raw cashews, crushed garlic, coconut aminos and jenny d's bees raw local honey, reduce the heat to medium to low and continue cooking for another 3-5 minutes, stirring occasionally.


Season to taste with duxbury saltworks sea salt and simply serve on its own, pour over grains or pile into your favorite wrap.


PRO TIP: Jicama (hi-kuh-muh.....it's okay, we thought it was pronounced ji-kah-muh when we first read it too!) wraps are just thin slices of the jicama, a root that taste a bit like a potato and an apple had a baby, that make a great clean alternative to traditional tortillas and rice wraps!
