Butternut Squash & Apple Sheet Pan Soup (dairy free + gluten free + paleo + vegan)

This hearty and healthy mix is packed with antioxidants and will warm your soul right up!
butternut squash is an excellent source of vitamin A, which helps to support ocular health and vision.
natural sea salt contains sodium and potassium, both of which help to release retained water and reduce inflammation.
honey crisp apples are a good source of fiber and include antioxidants linked to multiple health benefits.
coconut oil contains a unique combination of fatty acids that have been shown to help support healthy brain function.
cashews contain nutrients important for energy production, brain health, immunity, and bone health. They are low in sugar and rich in fiber, heart-healthy fats, and plant protein.
cinnamon is shown to have some antioxidant, antibiotic, and anti-inflammatory properties.
ginger is packed with antioxidants, compounds that prevent stress and damage to your body's DNA. They may help your body fight off chronic diseases like high blood pressure, heart disease, and diseases of the lungs, plus promote healthy aging.

Butternut Squash & Apple Sheet Pan Soup
INGREDIENTS
40 oz chopped butternut squash
4 honey crisp apples (peeled & chopped)
2 tbsp coconut oil
1.5 cups cashews
4 tsp SalterieOne sea salt
32 oz water
1/2 tsp cinnamon
1 tsp ginger
1 tbsp apple white balsamic
METHOD
In a bowl, add chopped butternut squash + honey crisp apples + coconut oil + 2 tsp sea salt. Toss to combine.
Roast on a sheet pan at 400 degrees for 30-45 minutes, until squash and apples are easily mashed.
Soak 1.5 cups cashews in 16 oz water for 1 hour. Blend until smooth.
Add roasted squash + apple + 16 oz water. Blend until smooth.
Then add 2 tsp sea salt + 1/2 tsp cinnamon + 1 tsp ginger + 1 tbsp apple white balsamic.
Mix together until desired consistency and enjoy!
